白木のカウンター8席のこじんまりした構えだが、流石の美味しさでした。
先ずはアテから。アカニシ貝、タコの柔か煮、鰊。アカニシ貝は七尾湾で取れる巻貝で、コリコリ食感で磯の香りが鼻に抜ける。
イクラ載せ茶碗蒸し。大粒で艶々のイクラがとても上等で美味い。ここまで美味しいイクラは滅多にないと思った。
ちょっと驚いたのは、セコガニが出た事。この辺りはまだ解禁になっていないハズですが…。北海道物だそうで、もう普通に流通しているらしいですわ。
アテが7品出てからにぎりに入ります。
細かい隠し包丁が入った数々のネタは冷蔵庫保存では無く、木箱に入っていて適温です。
本マグロの漬け、中トロ、甘エビ、ノドグロなどなど。
シャリも一口サイズで、醤油もハケで塗ってあるので、とても食べやすいです。
金沢で成功されて、六本木にも錦を飾り、今は金沢市内？でおにぎり屋さんも始められたとの事。日本の食文化をしっかり守っておられますねぇ。
