後輩とランチで。
オーダーは「加賀会席 雪コース 寿司」。
加賀料理を一気に味わえるところがいいですね。
ごりの唐揚げは初めてでしたが見た目は小さなおこぜ。調べたら川で採れるカジカなんですね。小さなごりを頭からまるごと。しっかり揚がっていてとげも気にならず柔らかかった。
そして加賀の郷土料理の代表のような治部煮。
わさびで食べるんですね。ほっこり優しい味。
生まれも育ちも金沢市内の40代後輩女子は子どもの頃から治部煮が家庭で出て来た記憶はないみたい。
家によって違いはあるのでしょうが、家庭で作っていたのは恐らく昭和ぐらいまでの話なのでしょうね。
最後の甘味は、オーナーの娘さんがパティシエらしく季節柄雛祭の菱餅を意識した素敵なケーキ。
料理は彩り鮮やかでどれも美味しかった。
茹でカニ足も頂きましたが撮り忘れました。
金沢駅から近いのでインバウンドで混雑かと思いきやこちらは現状日本のお客さんが多いようです。
