金沢旅行思い出の〆は当店で・・・、金沢駅からほど近い、お車で５分程です。
２０１４年7月にリニューアルオープンし和と洋の調和がとれた店内。客席の片隅には石臼が置かれ製粉時にはほのかに蕎麦の香りが広がります。 また蕎麦の産地にもこだわり、農家さんの顔が見える国内産の玄蕎麦を直接仕入れております。店舗自家製粉工房にて『磨き』『石抜き』『選別』『脱皮』等の工程を手間暇かけ、その日使う分だけを石臼挽き自家製粉しています。蕎麦本来の香りと風味、本格蕎麦をごゆっくりとお楽しみくださ |
金沢のうどん文化に抗い続けるそば店巡り。
メニューににしんそばの文字を見つけて注文するも、今にしんがないとのこと。
暫し呆然としつつ、気を取り直してメニューを見直す。
鴨南蛮を注文できるようなブルジョワではないので、鶏南蛮そば1100円を注文。
出汁はカツオが香るあっさりスープ。
温かいそばだとややコシがなくなるのは仕方ないですね。
そばの風味はしっかり感じます。
