There is a samurai residence district nearby. Kurazuki irrigation water flows in front of the store. There is a small bridge over there, and there is a store across the bridge. The approach to the store also has a bit of an atmosphere. The inside of the store is small with 7 seats at the counter and 1 seat in the raised area. Since I had made a reservation, I entered the store smoothly. After washing your hands and entering the store, your temperature will be taken using a thermometer. The counter has an acrylic board hanging on the front as well as the side partition, so I think this is a store with a very high level of coronavirus prevention. There is a small blackboard in front of and next to the counter, which lists the day's recommended menu. The front is the food menu, and the right is the alcohol menu. The food is on a two-tiered blackboard with a menu of about 30 dishes. Prices are not listed for some items, but a la carte dishes start at around 500 yen and are reasonably priced. The alcohol menu is Japanese sake. There are about 10 types of sake listed, not just from Ishikawa Prefecture, but from all over the country. A nice touch is that you can order everything from half a cup. I wanted to order a variety of things, so I ordered a wide variety of items in small quantities. [b:〇Added] Ebisu is Local Cuisine of Kanazawa. Also called berobero. It is made by pouring beaten eggs into agar, but it looks gorgeous. Dishes that evoke the elegance of Kanazawa. The seasoning is sweet, but the flavor is gentle, giving you a sense of the quality of this restaurant. [b:〇Simmered fish eggs] The seasoning of boiled fish eggs is more delicate than I expected. I thought the flavor was stronger to eliminate the fishy smell, but that's not the case at all. However, I don't notice the slightest bit of fishy smell. It's probably because the ingredients are fresh and well-processed. It tastes elegant and has a wonderful aftertaste from the yuzu sprinkled at the end. The balance of seasoning is extremely good, but the price is around 500 yen? ? This made a great accompaniment to Japanese sake. [b:〇Homemade tofu] At this point, I decided that anything at this restaurant would be delicious. In that case, I'm tempted to get hung up on words like "homemade." I wait with great interest to find out what homemade tofu is. The tofu served was sticky and rich. Yet it has a smooth texture. Just when I thought this wasn't soy sauce, there was a small plate of salt on the side. As expected. The tofu had a very strong flavor and went well with salt. [b:〇Sashimori] At the time of reservation, I was asked about ordering sashimi-mori and nodoguro, so I ordered sashimi-mori. Barracuda, white mackerel, calf, sweet shrimp, bonito, pickled vegetables, sea bream, and aori. This is a very luxurious sashimi. This is amazing no matter what you eat. Shimesaba is a delicate sashimi that can have a strong odor depending on the restaurant, but here the meat is reddish and you can tell at a glance how fresh it is. Did you need to close this? That's what I think, but the slightly compressed taste really brings out the flavor. Is this sashimi a hobby of the shop owner? I felt that everything was of a really high standard. [b:〇 White shrimp Tempura] This is a taste of Hokuriku. Each one is very large. It is then carefully made into Tempura. When you eat it with salt, it tastes even better. The alcohol goes on and on ^^;; It seems that white shrimp fishing can only be done in Toyama Bay, but as expected, it's a local thing. It tasted great. [b:〇 Deep-fried raw wheat gluten] Apparently it was recommended, so I ordered it, and this was the correct answer. First of all, it looks beautiful. Namafu is purple and white. The vegetables are green shishito peppers, white radish, yellow ginger, black seaweed, and pink bonito flakes? It's fun just looking at the different colors in the bowl. And the taste is amazing. First of all, the soup stock has an elegant flavor with hints of bonito. This soup is so delicious that you can drink alcohol just with it. It smells good and stimulates your appetite. And raw wheat gluten. This is very soft and chewy. A masterpiece that pleases the eyes, tongue, and teeth. Well, it's a wonderful dish. I ordered sake with each dish, but eventually some items were not on the menu. If you leave it to us, they will suggest not only the brand but also the temperature at which it should be served, depending on what you are eating. There is nothing wrong with the sake that comes out this way. It's definitely a sake that goes well with the food you're currently eating. The owner must have great taste. That's why I felt that I was able to make such delicate dishes. The owner seems busy and isn't at the counter a lot of the time, but when he does appear, he'll have a quick chat with you. And before you know it, you start talking with the customers around you and the shop owner. Well, it was a fun night and I'm very satisfied. It is a feast for the eyes, ears, tongue, texture, and aroma. It was truly Izakaya (Japanese-style bar) that you could enjoy with all five senses.
