蓮根の料理を中心にした小料理屋さんです。伝統的な郷土料理がある一方で、創作的な印象の料理もあって楽しめました。
かわはぎ薄造り。もみじおろしポン酢と肝醤油の両方が用意されてました。
金時草とベーコンのサラダ。加賀野菜を洋風のサラダにアレンジ。量があって食べ応えありました。
はものねぎま。これはなかなかいいですね。おとしと違って香ばしい。薬味は独自の梅肉ソースと柚子胡椒。ともに相性が抜群でした。
水茄子。生姜醤油、塩、オリーブオイル。ご主人の味覚の幅を感じます。
蓮蒸し。大きな蓮根の団子のあんかけ。うなぎ、ガス海老、生麩、スナップエンドウが入ってます。はす家さんを代表する料理だと思います。痺れる美味さ。間違いなく今夜の逸品でした。
