スープは鶏ガラ豚骨ベースの魚介味噌味。麺は太縮れ麺。具はロース肉のチャーシュー,挽肉,白髪ネギ,モヤシ,メンマ,柚子,生姜,青のりを使用。
鶏ガラ・拳骨・モミジ・煮干・昆布・椎茸からとったスープに適度の油分を加え、爽やかな柚子風味とほのかな生姜風味をアクセントに、芳醇でまろやかな味噌風味が香り立つ味わいで、鶏豚骨出汁でコクをもたせた濃厚な仕上がりになっています。麺は石川県の製麺臥龍を使用し、もっちりでプリプリとしたコシ感がありスープとよく絡んで頂けます。能登豚を使った大ぶりのチャーシューが１枚入っていて、もっちりとした肉質感があり肉の旨みがよく味わえとても美味しく頂けます。また、メンマもいい仕事をしています。備付の黒胡椒・一味・お酢・十味で味の変化を楽しめます。食前に血糖値抑制に効果のある特製野菜ジュースが提供されます。
