It is said to be one of the most well-established Italian Cuisine restaurants in Hanamaki city. I'm not very knowledgeable about restaurants in Hanamaki City (^^): Because of this, I can only rely on information from local (Iwate) reviewers. I queued up (at the front of the line) and a regular customer who was behind me said sorry and went inside the restaurant before opening time. I was suddenly overwhelmed by the power of regulars at a popular restaurant (lol). A few minutes before opening time, the staff opened the door to check who was there. They also asked if I had a reservation... Even I, who am insensitive, noticed the atmosphere that you can't enter the restaurant without a reservation (sweats). However, it seemed there were a few seats available for walk-ins, so I was shown to a counter seat. ◇ Lunch Pasta (¥1300) includes an appetizer plate, soup, and soft drink (I chose homemade bacon and mushrooms, and tomato pasta with shiitake mushrooms) After a while, cold water was served, and cutlery and Parmesan cheese were laid out. Salad and soup were served first. This was of average quality. Then came the appetizer, a four-item platter on one plate. Homemade bacon, salmon, and raw guinea fowl (sweats) Since I had the chance, I ate it all, but even though it was dehydrated (aged), it was too much for me, it tasted like raw meat (lol). While I was writhing in agony like that, the main pasta dish arrived♪ The first thing I noticed was the richness of the tomato sauce. It was like a sauce made from simmered whole tomatoes without adding water. It had a Neapolitan-like finish with minimal use of olive oil. It also really brought out the whiteness of the mushrooms. I rolled the pasta around my fork and put it in my mouth. ...A world of umami that you would never find with raw shiitake mushrooms... As you know, unlike Chinese Cuisine, pasta dishes rarely use umami seasonings. Even so, I was honestly surprised by the umami that flooded my mouth. The answer is probably shiitake mushrooms. They have a concentrated umami flavor, as if they have been sun-dried (lightly dehydrated). Of all the mushroom pastas I have tried, this is by far the best♪ I am grateful for another wonderful encounter today. Thank you for the meal~ (^^v
