花巻市では筆頭となる老舗のイタリアンらしい。
何せ私は花巻市の飲食店の情報についても疎い（＾＾：
そんな感じなので地元（岩手）のレビュアー様の情報だけが頼りとなります。
並びます（先頭）私の後から並んだ常連さんがごめんよと言い開店前の店内に入って行きます。
いきなり人気店の常連さんパワーに圧倒されました（笑）
開店時間の数分前に店員さんがドアを開けゲストの確認を。
ここでもご予約の方ですか〜みたいな確認を・・・
さすがに鈍感な私でも予約無しでは入店出来ないのか〜みたいな雰囲気に気付く（汗）
しかし飛び込みでも席は若干あるようでカウンター席に通されました。
◇ランチパスタ（¥1300）前菜プレート、スープ、ソフトドリンク付きます
（自家製ベーコンとマッシュルーム、椎茸のトマトパスタをチョイス）
暫くしてお冷、そしてカトラリーとかパルメザンチーズが並べられます。
最初に提供されたのはサラダとスープ。
これは普通の出来。
その後前菜となるワンプレートの四点盛り。
自家製ベーコンとかサーモンそしてホロホロ鳥の生肉が（汗）
折角なので全て完食しましたが脱水（熟成）しているとは言え私にはキツ〜い生肉系〜（笑）
そんな感じで悶絶していたらメインのパスタの登場♪
最初に感じるのはトマトソースの濃さ。
加水しないホールトマトの煮詰めた様なソース。
それはオリーブオイル使用を最小限に抑えたナポリタン的な仕上げ。
そして茸の白さが際立つみたいな。
取り敢えずパスタをフォークで巻いて口に入れます。
・・・生の椎茸ではまずありつけない旨みの世界が・・・
ご存知の通り、パスタ料理は中華料理とは違い、うま味調味料はまず使いません。
それでもこの口腔内に溢れる旨味には正直驚かされます。
答えは多分椎茸。
天日干し（軽く脱水）されているような感じで凝縮された旨味を感じます。
私が今まで試した茸パスタではダントツとなる筆頭パスタとなるでしょう♪
