岩手県の地場食材を活かした日本料理を食べられる老舗料亭です
創業1850年、現在は京都『飄亭』さんで修行された七代目がもどられ料理長に、温故知新の精神で新たな挑戦をされています
この日は
「イシカゲ貝とつるむらさき」
岩手県陸前高田の広田湾のイシカゲ貝と粘りあるつるむらさきとをあわせて土佐酢と鬼おろしでいただきます、イシカゲ貝の食感も香りも楽しめる一皿です
「桃の胡桃白和え」
硬めの桃を焦がし醤油でととのえて白和えに、この硬さがちょうとよく胡桃の香ばしさとも相性よいですね
「鮎の塩焼きと香魚と香茸の春巻き」
シンプルな塩焼きの鮎とともに鮎と香茸の春巻きです、鮎の身の食感や味わいの変化を楽しみました、春巻き美味しい
「枝豆と茗荷の土鍋ご飯」
炊きたてのご飯からは枝豆の香り素晴らしく、口に含むと茗荷の爽やかな刺激でさらに枝豆の甘みもしっかり楽しめます、途中に「自家製塩雲丹」や「帆立の天ぷら」も添えられて美味しかったなー
