The noodles are made by hand every morning, with careful consideration of foot pressure, temperature, and humidity.The noodles are made from blended wheat, making them medium-thin noodles that are chewy on the outside and chewy on the inside. The bonito-based soup is also appealing! Please enjoy the deliciousness of both the ``thick dashi (cold)'', which has a sweet aftertaste, and the refreshing ``kake dashi (warm)'', which many people drink up.
