私は俗に言う『田舎蕎麦』は嫌いです。
蕎麦粉の優劣ではなく、そもそも蕎麦を打つ技術が足りずにボソボソで喉ごしが悪く、下手すると全く繋がっておらず『ソバメシ』みたいな蕎麦を出す店があります。
蕎麦畑というのは地方の、それも痩せた土地に在来するものが多いので地方の僻地で蕎麦屋に出会す機会も多いのですが…残念な店がほとんどですね
長野や茨城、京丹後などの田舎で本物の蕎麦屋を営んでおられる方を心より尊敬します。
こちらの店は鹿児島のど真ん中、天文館で洒落た店構えを誇ります。『江戸前』に寄せたせいろ蕎麦はなかなかの仕上がりです。
しかしながら、私がお勧めしたいのは『かけそば』です！出汁が素晴らしい！三つ葉も柚子もいらないほど好みの味です。
九州の蕎麦屋で『蕎麦前』もしっかりしているのは嬉しい限り！枡にちょこんと塩を乗せて、昆布の佃煮を肴に飲む酒は格別です！

鹿児島のお客様とランチです。
ご老体との昼食なので鰻を検討しましたが、まさかの臨時休業…さっぱりと蕎麦をご所望されたので此方へ
場所も中心街だし、雰囲気も悪くない。そして、肝心の蕎麦も南九州では珍しくちゃんとしてます。
軽く蕎麦前で呑みながら蕎麦を手繰る…
本当に貴重な店です。
