麺屋武蔵で修行された方がやっているお店なのだが、武蔵よりも出汁が濃厚なように思う。かつお節とどんこの出汁を使った濃厚魚介豚骨系。地元・枕崎ではなく焼津のかつお節を使っているのが意外だった。何か意図があるのだろうか?
この日はちょっとだし汁の量が足りなかったなぁ。昨今の原材料費高騰などの事情はあるのだろうが、大盛にした際のつけ汁の量はもう少し考えて欲しいとは思った。コスト的に厳しいなら何も無理に大盛無料じゃなくても良いと思う。それよりも、例えばつけ汁が足りない時の追加無料とか、ちゃんと"食べさせる"ことを意識して欲しいと思う次第。
それにしても、鹿児島にいるとついつい昼食のラーメン率が高くなる。
