･麺は中〜多加水の中太麺(自家製麺)
･食感やや柔めもコシは確り残していて中太ながらスープの拾いも良い。
･噛み締めると小麦の味わいも素晴らしくめっちゃ好み✨✨
<スープ>
･スープは豚×鶏の醤油清湯。(薄口醤油)
･重厚な豚と鶏の旨味を感じる。
･カドのない微かな甘さを備えたタレに心地よい酸味(お酢?)と葱油のコクが重なる独創的ながらバランス良いスープは絶品✨
<トッピング>
･モヤシとネギは食感を確り残したもの。
･チャーシューは豚肩ロースのコロチャーで肉の味わい良く適度な醤油感の味付けも秀逸✨
