･麺は多加水の平打ち太麺。(jungo製)
･表面は滑らかでモッチリ食感で腰もある。
･小麦の味わいも良く旨い

･つけ汁は秋刀魚(炭火焼)×煮干主体の濃厚醤油。
･ガツンと秋刀魚の旨味に煮干も確りで動物は不使用又は極少量。
･ビター感強めで塩味も強く秋刀魚油のコクが重なる煮干狂が好みそうなパンチの強さの味わいは超好み✨✨

･チャーシューはバラチャーでホロヤワ食感で味わいも良く旨い✨
