I have experience working at a tonkotsu Ramen shop. At that time, I always ate the basic salted tonkotsu ramen with one slice of char siu and a little bamboo shoots before opening to check the soup. It must have been about 20 years ago... After I quit, I didn't want to eat tonkotsu anymore, so I didn't eat it. Today, the shop I was aiming for was closed, so I came here. It's a famous shop, but it's my first time. It was before 12 o'clock, so there were four people waiting. In the meantime, I checked what kind of menu they had. For your first time, you should try the original flavor. Kiwami Shiromaru Genmi 1290 and Hakata Ippikuchi Gyoza / Dumpling Half 250 (both tax included). Two types of char siu (two slices of loin meat and one thick slice of belly meat), soft-boiled egg and wood ear mushroom. The soup is rich, but a little garlicky. It feels a little rough on the tongue. The noodles are straight. This is Hakata. It goes well with the soup. The loin char siu was easy to eat, but the belly meat felt more fat than tender, and it was insulated halfway through... It seems that it was not suitable for me now. There was a long line when we left the store. It seems to be a popular store.
