横浜・石川町、「喜多方ラーメン 坂内」。【94th】
中華街のチャーシューも好きだが、坂内のチャーシューも捨て難い。(笑)
横浜・石川町駅のスグ近くの店である。
たった、5,6分ほど足を延ばせば、中華街なのだが、その日は、喜多方の坂内気分だった。
「喜多方わんたんラーメン」(880円)+「ミニ炙り焼豚ご飯」(190円) ―― 写真の通り。
珍しく、ワンタンラーメンにいってみた。
中華街でさんざん食べているのだが、比べてみたくなった。
のだが、よくわからなかった。日本のワンタンだな、とは思った。(笑)
僕は、この喜多方ラーメン坂内の「焼豚」と表記されるチャーシューが好きなんだな。
適度な、脂身感の甘さと、赤身部分の味の浸み込みと、スープに還元される雰囲気。
例えば、焼豚を提供時にスグ食べる味わいと、最後に食べる味わいでは異なるのである。
部位の問題ではなく、浸み込みの浸透圧的な問題なんだと思う。
淡いスープに、この焼豚の味わいがしみ出る感じも、また味わいの揺らぎのようなグラデーションを楽しめる一因だと思っている。
焼豚ラーメンなどは、明らかに到着時のスープの方が淡く味わいも澄んでいる。
炙り焼豚ご飯、タレが濃すぎる感じだが、十勝豚丼的に香ばしく食べられる。
ココから、ラーメンのスープに戻ったときの落ち着きも何だかイイ。
中華街のラーメンなどとは比べるべきモノではなく、坂内は坂内として、いつも美味しく食べられる。
うん、満足。

[b:Continued: I like the char siu in Chinatown, but Sakauchi's is hard to pass up. (laughs)] This restaurant is located right near Ishikawacho Station in Yokohama. If you walk for just 5 or 6 minutes, you will reach the fascinating Yokohama Chinatown, which is full of various delicacies, but that day, I felt like having Sakauchi's char siu in Kitakata. I visited it about three years ago with the exact same feeling. Not only Sakauchi, but also Osho and CoCo Ichibanya in the Ishikawacho area are a difficult choice for me. "[b:Roast pork Ramen with salt]" (1,200 yen) + "[b:Half rice]" (100 yen) -- As shown in the photo. No matter how many times I look at it, this visual gets me excited. It's the best. Sakauchi's char siu is full of flavor. Of course, the way it tastes changes slightly depending on the part. That's why I've been eating it to a certain extent for a long time.
