まず、寿司のネタの温度管理が重要なのは寿司客の常識だと思うが、例えば、トロにしても、ブリにしても脂の温度によって舌触りが全然違う。ここは勿論そうゆう基本はバッチリおさえているので心配ご無用。温度帯をわざと上げているものは上げているので、脂の溶け方が違う。
勿論季節物もシッカリストックしている。
前回は穴子の稚魚を頂いた。ノレソレと言うらしいが初めて食べた。日本人でないと分からん世界で、勿論私も日本人なので、それを実感。
これの良さは外国だとなかなかわかってくれんだろう。
わざとなのか、チョット目だたない場所にある。派手な宣伝も、何もない。
これは恐らく店主の考えなんだろう。
カナリいい所で修行をされたのだろうか。
しかし、全てが丁度良い。
