This is healthy and safe ramen made with carefully selected water, salt and ingredients.
The soup is boiled separately in three pots. Pot 1: pork (pig's trotters, backbones, and tendon bones), Pot 2: chicken (chicken bones, chicken trotters), and Pot 3: dashi (dried horse mackerel, kelp,
...and various vegetables). Each pot has a different heat and boiling time. The three are all completed and then combined at the end, bringing out the flavors of each, resulting in an elegant soup with a deep flavor and a clean, rich taste.
