赤テント看板の「札幌ラーメン」に惹かれ19:00に訪問、先客、後客共に無し。
味噌ラーメン ¥700
静寂に包まれ、清潔感有る店内のカウンター席から、御主人のワンオペを拝見します。
中華鍋を使用していますが、具材を炒める小気味良い音は聞こえません。
無駄の無いオペを経て、"熱いので気を付けて" の一言と共に程なく着丼です。
外観は、やや薄めな色合いの味噌スープに、多目の脂層、煮豚、支那竹、モヤシ、人参、玉葱、長葱、板海苔の構成で、炒め挽肉は入っていません。
先ずスープを啜ると、かなりの高温で提供されています。
味噌と脂分が混じり合い良い味ですが、ベースである中華スープの出汁感が弱く、味の深みが足りず悔やまれます。
お馴染み濃い黄色の西山製麺、多加水中太縮れ麺は、弾力を楽しめスープを良く持ち上げ、後半でもコシを維持しています。
此方は西山製麺の直送を店外の幟で謳っている通り、食事中宅配便で西山製麺と印刷された段ボール箱が配達されていました。
昨今流行りの濃厚味噌ラーメンとは、一線を画する昔ながらの味噌ラーメンですが、この単価設定で西山製麺の直送麺を提供してくれるとは嬉しい限りです。
