週末神奈川でゴルフを終えた帰り、小腹が空いていたこともあり名店櫻井も流石に夕方は空いているだろうと保土ヶ谷で途中下車。
夕方18時すぎの夜の部開店直後だったせいか、お店は待たずに入店出来た、ラッキー♪
特製醤油中華そば(1,450円)をオーダー。
店内は黒を基調とした小洒落たお店で居心地良し。
アルバイト含め店員は三人いるが、ラーメンの作り込みは櫻井シェフと思われる人が一人で担当、これだけは誰にも任せられない！と言わんばかりに麺の茹で上げから盛り付けまで全てお一人で行われてた…凄い！
程なくして目に前に運ばれてきた丼ぶりは、淡麗琥珀色の湖面に整然と並べられたチャーシューと半熟の寿雀卵の綺麗な橙色と薄っすらと浮かぶ脂分の照り返す光が、もう超〜美味そうでこれだけで垂涎〜！
先ずはスープを一口…大量の丸鶏と鶏ガラ・豚ガラをじっくり炊いたという出汁の旨味を全面に感じながらも最近強めにしたという魚介の味とかえしの醤油のコクと旨味がバランス良く効いてて中々の仕上がりで美味しい〜♪
店前で作っている北海道産の小麦をメインに数種類ブレンドした自家製手もみ麺は、美味しい小麦の味ともちもち感の歯応えが良くスープにとても合ってる！
チャーシューは吊るしで肩ロースとバラ肉の二種類だが、どちらも柔らかジューシー…薄味で肉の自然の旨味を出してて、スープの味を邪魔せず美味い！
綺麗な橙色した地元産寿雀卵の半熟玉子も黄身が濃厚でトロッとして美味しい〜
完成度の高い一品でした！
