店内はピカピカで、背筋がピンと伸びるようだった。
残念ながら写真はＮＧ。
目黒のいずみの先代のお弟子さんである店主は、唯一
暖簾分けを許された方。丁寧な仕事をされる、江戸前鮨
の誇り高き職人という印象だった。
つまみはたった3品。そこに握りへの拘りと自信を予告
された気がした。
シャリは和さび（鎌倉）ほどではないが小さく、口の中
ですぐ解ける。赤酢は使用せず、ネタによって酢を使い
分けているそうだ。締めや漬けの仕事は、手間隙かかる
きちんとした仕事がなされていて、店主の性格が現れて
いるように感じた。
白烏賊、甘鯛、鮪漬け、鯵、しんこ、かます、煮蛸、穴
子、巻物、鮪の全部巻き他...（写真がないと記憶力の低
下が早い）今回はこれが一番という感想ではない。
本来あるべき鮨という原点に戻って食べてくださいと語
りかけられていたのかもしれない。
