念願叶い鎌倉の名店イチリンハナレさんへ。
銀座『チャイニーズ一凜』、日比谷『TexturA』を手掛けるシェフがいるお店。鎌倉駅から徒歩20分くらいの閑静な住宅地の中にありました。
鎌倉らしさもある中庭を覗きながら廊下を案内されてカウンター席へ。
めちゃめちゃかっこいい、、、テンションあがる。
さてお食事。
乾杯のドリンクは富山セイズファームのワイン。
ルレクチェの微発砲系。最高。
1品目はお米のすりながしのような品。ほどよく温かく、準備運動にはちょうど良い。
2品目は平目の昆布〆。中華だけど和の文化をもちいてあって良い。香草にも合う。
3品目はあん肝。上品。かなり秀逸な品で、美味。喉黒の煮付けをしたときの旨味を感じ、どうしたらこんな美しく仕上がるのか、不思議。すごい。
4品目、名物よだれ鶏。丹波の高坂地鶏を使用。最高。
一凜やTexturAと同様の3段階活用。そのまま→餃子→山椒麺。←山椒麺めちゃ美味しかった。お代わりしたかった、、
7品目はフカヒレ。トロトロぐつぐつの白湯スープに絡めて、上品なフカヒレをいただく。スープ全部のみたいくらい美味しい。フカヒレのスープはごはんでおじやのサービス付き。最高。
そのあとは、五島列島の鰆とスパイスを使用した逸品に鴨料理、コースになかったので追加オーダーで黒酢のカツサンドも笑
締めは麻婆豆腐に白ごはんの定食。ザーサイの漬物も良かった。
スイーツが2種でて終了。
はるばる鎌倉に来た甲斐がありました！
再訪も期待したいです！
