Food A local chicken named Amakusa Daioh
Amakusa Daioh, a mythical free-range chicken that became extinct around the early Showa period. In Kumamoto Prefecture, the new "Amakusa Daioh" was born by breeding the "Lanchamp", "Big Gamecock", and "Kumamoto Cochin", and crossing the restored Amakusa Daioh male with the Kyushu Road female. At our restaurant, all of our staff travels to Amakusa, Kumamoto Prefecture, where we tour the chicken house and listen to the farmers' thoughts before purchasing, cooking, and serving the chicken.
