2022年12月27日（火）：北海道味噌ラーメン（850円）
こちらのお店は、2022年6月14日、ドルチェ→フェリーチェ・ホマレ（ダイニング・ホマレ（橋本2-11-8 ）の支店）の跡地に開店。昼は北海道味噌ラーメン店、夜は創作和食の居酒屋という営業形態。店主さんは北海道出身。
場所は、JR/京王・橋本駅から南西へJR横浜線沿いに約1km。国道16号線を越えた住宅街の中にあります。駅近至便とは言えぬ、車で訪問する方が適切な立地ですが、お店の駐車場はないので、線路沿いのコインパーキング利用となります。今回は駅から徒歩で訪問。
この日の到着は正午頃。店内の座席はお昼時とあって結構埋まっていました。手前のスペースには左側に4人掛けテーブルx2、右側に2人掛けテーブルx1。奥のスペースにはカウンター4席。計14席あります。奥のカウンター席が1席空いていたので、そちらに着席して上記メニューを早速オーダー。
奥のカウンター内には女性スタッフ1名（「ママ」と呼ばれていたので奥様でしょう）。カウンターのさらに奥にある厨房内には調理中の男性スタッフ1名（店主さん）。計2名体制です。
卓上の調味料は、醤油、一味唐辛子、辣油、酢、黒胡椒パウダー。オーダーが入ってから8分後に、先客2名分と合わせての着丼。
「北海道味噌ラーメン」は、札幌ラーメンに不可欠な中太縮れ玉子麺140gをさらに手揉みしたものを使用。これに合わせるのは、鶏ガラ出汁と、北海道産味噌を主に用いたかなり淡い色合いの味噌ダレとを合わせたスープ。仕上げ油は無し。
具は、豚肩ロース叉焼、炒めた挽肉・モヤシ・韮、最後にトッピングされた葱。
まずはスープから。白っぽい色合いの味噌ダレスープは、鶏ガラ出汁と相まって。おとなしくて上品な味わい。ほんのり生姜が香ります。プリプリの中太縮れ麺との相性は言うまでも無し。
鍋調理で炒めた挽肉・モヤシ・韮のコクや旨みも良い感じです。途中からモヤシに一味唐辛子を振りかけて、少しピリ辛風に味変をしながら頂きました。
他のメニューとして、数種類の味噌をブレンドした赤くてコクのある「濃厚味噌ラーメン」、「辛味噌ラーメン」もあり。単品トッピングも多種あり。
サイドメニューは、羽根つきギョーザ、ライス、明太ライス等。
