...shop's signature dish "Yanagi Shio," which is light yet full of flavor and umami, "Futaban Tsukemen," where the noodles are coated in a rich seafood soup, and "NIRA Mazesoba (Soupless noodles) Midori," which you can enjoy by adding rice even after you've finished the noodles. The special soup takes 6 to 7 hours to prepare, and the eggs and char siu toppings are also homemade.
