ヴィラサントリーニのメインダイニング logue で夕食。18時いっせいスタートだから遅れたら食べられないとか予約の時に言われたらしいので10分前に行ったら入れてくれないので、ちょっと切れた。そもそも一斉スタートは好きじゃないが、一斉スタートというからには18時にスタートに余裕を持ってくるのが当たり前だと思うのだが、その客を入れられないなら一斉スタートとかいう権利はねえって感じだったんだが。
ディナーコース(17600円)1本でワインはペアリングもある。シャンパンは要らなかったのでペアリングにはせず、グラスを相談しながら合わせる事にした。
サンペレグリーノ(880円)もオーダー
食前酒としてウーゾのソルベ みかん茶割 へえって感じ
3杯くらいのイメージと言うと正光園シャルドネ2022(1650円)を始めのワインとして勧めてきた。このワインがとっても面白くまったり感のある美味しいワインで翌日取り扱っている酒屋に買いに行ってなかったのでネットで購入したほど。

ライスコロッケ ボロネーゼ 稲荷町のキエチュードのようなプレゼンテーション

しんちゃんトマト リコッタ 優しい味わい
3皿目は
藁焼カツオ かつお菜ペースト マスタード 菜花 黒大根 藁焼カツオはソースを使わず塩で食べるのが一番美味いってのが難しいところ
2杯目のワインはChablis Marcel Servin これも美味しい
4皿目は
真鱈の白子 春菊のスープ 美味しい
5皿目は
色々な野菜のサラダ フォントゥーナチーズや白味噌などのスープ
使っている野菜の種類がいっぱいでその野菜のリストが先に来たのでガルグイユかと思ったらサラダだった。
3杯目のワインは Vel`uveyra Rosado スペインのロゼワイン
6皿目
白甘鯛 筍 松笠焼きな感じの白甘鯛
7皿目
鹿肉のリゾット リゾットは鹿肉のというネーミングからの印象とは別の軽めの仕上がり。イタリアンシェフのリゾットというよりフレンチシェフのリゾットな感じのちょっとアルデンテを過ぎたけど許容範囲の食感だった
8皿目は
赤牛のグリル 赤牛は赤身で美味しい
デザート2品は
蕗の薹のピュレとコーヒーフレーバーのジェラート
べにふうき
土佐文旦 ジェラート
デザートはどちらも美味しい蕗の薹の苦味がいいアクセントになっていた
小菓子と抹茶
全般的に優しい味付けで淡い印象
このタイプの料理は酒が進まない事が多いのだが、面白いワインだったのでついつい飲んでしまったが、それは料理がワインを求めたというよりもワインの力という印象だった。リゾートの料理と思えば上質だが、オーベルジュの料理と言われると力不足な印象。
