須崎のグルメと言えば、かつお、うつぼ、ちりめん、四万十豚もありますが、『鍋焼きラーメン』というローカルフードもあります。旅行前にも、六角精児のテレビ番組でも須崎の『鍋焼きラーメン』を取り上げていたので、それを食べることにしました。
「鍋焼きラーメン」には決まりごとがあります。
・スープは、親鳥の鶏がらの醤油ベース。
・麺は細麺のストレートで少し硬めに提供。
・具は、親鳥の肉、ねぎ、生卵、ちくわ（すまき）など。
・器は、土鍋（ホーロー、鉄鍋）。
・スープが沸騰した状態で提供。
ストレート細麵にもかかわらず、最後まで「伸びた麵」にはなりませんでした。
卵の崩し方で食べ方もいろいろですが、私は、「最後に温玉を味わう、卵沈め派」です。
