熊本市にある「紅蘭亭 下通本店」さんに伺い、熊本名物 "太平燕"を頂きました。食べログ百名店ですね。
太平燕(タイピンエン)、初めて食べました✨
スープが美味しい✨正に五臓六腑に染みる味わいです。鶏ガラと豚骨の共出しとの事で野菜を炒めながら鶏がらスープを沸騰させて乳化させるとこの味わいになるんですね！
そして盛りだくさんの野菜と肉、烏賊、海老が美味しさを⤴︎✨海老は記憶の限りで6匹は入ってました(^_^)
塩加減が抜群で塩は希少な天日干しの福建塩を使用しているそうです。
緑豆100％の春雨は食感も良く素朴な味わい深さを感じます。揚げ卵のフーヒータンも良いアクセントでした！
店内は開放的で清潔感があり居心地良い空間でした。
店員さんの対応も丁寧でした。また伺います！
