We offer a wide variety of tacos and Mexican Cuisine, with all ingredients from tortillas and salsas made by hand. For meat, we actively use domestic chicken, domestic beef, and Kumamoto brand pork. We use vegetables purchased directly by the owner/chef. Mexican Cuisine has a strong image of being extremely spicy, but its essence is the same as Japanese-style meal, which is the culture of soup stock. Chili peppers produce the same glutamic acid that is used in kelp soup stock, and at our restaurant, the umami ingredients extracted from the chicken stock made from chicken breast are inosinic acid and guanylic acid, which are used in combination with the umami from chili peppers. In addition, the umami flavor components ``glutamic acid'' and ``aspartic acid'' can be obtained from tomatoes, which are often used in Mexican Cuisine.
