It opened as an antenna store for two months in 2008, but reopened on weekends in July 2009. [Dinner information] We offer authentic Mexican Cuisine using Mexican corn flour and 9 types of chili peppers that go beyond the authentic taste. We offer a wide variety of tacos and Mexican Cuisine, with all ingredients from tortillas and salsas made by hand. For meat, we actively use domestic chicken, domestic beef, and Kumamoto brand pork. We use vegetables purchased directly by the owner/chef. Mexican Cuisine has a strong image of being extremely spicy, but its essence is the same as Japanese-style meal, which is the culture of soup stock. Chili peppers produce the same glutamic acid that is used in kelp soup stock, and at our restaurant, the umami ingredients extracted from the chicken stock made from chicken breast are inosinic acid and guanylic acid, which are used in combination with the umami from chili peppers. In addition, the umami flavor components ``glutamic acid'' and ``aspartic acid'' can be obtained from tomatoes, which are often used in Mexican Cuisine. We offer surprising experiences for the first time, such as salsa sauce made from tomatillo (edible groundnut) and habanero pasta using habanero grown in Kumamoto Prefecture. [Lunch information] We offer two types of ``Mexican Ramen'' for lunch on Mondays, Tuesdays, Thursdays, and Fridays. Mexican Cuisine is a ``soup culture''. There are many dishes that use dashi stock, such as soups and salsa, and among them, we developed ``Mexican Ramen'' using a soup that goes perfectly with noodles. For dinner, we operate as an authentic Mexican Restaurants.
