仕事で熊本に滞在していた期間に訪れました。市内の繁華街、アーケードから一本入った近代的な商業ビルのテナントに入っていました。
店内に入ってまず目に飛び込んでくるのがウォークインワインセラー。
店の顔になっています。大きくはないですが、中に入って好きなワインを選べるというもので、ワインリストから選ぶのとは違った楽しみがあります。
料理はトラットリア料理、盛り付けはシンプルでトラットリアといった感じですが、味が優しすぎる印象を持ちました。
美味しいのは間違いないのですが、個人的な好みの問題か、パンチがなく、きれいにまとまり過ぎているといった感じ。
しかし、メニューからも伝わってきましたが、食材には結構力を入れているようで、サマートリュフをたっぷり削ったタヤリンは、正直期待以上のものでした。
トリュフ自体の香りは弱かったのですが、パスタの生地が美味しい！！
麺の黄色味が濃かったので、おそらく卵黄の配合がかなり多いのでしょう。
全卵で打った手打ちパスタはコシが弱く歯ごたえにメリハリが無いのですが、卵黄で打つ生地はパツっと歯切れがよくなります。
粉の香りもしっかりと感じられ、非常にレベルの高い手打ちパスタを頂くことができました。
店内は満席に近いくらい賑わっており、地元に愛されている良いレストランなのだな、と感心しました。
