熊本の牛深丸は、寿司好きにはたまらない穴場の宝石だ。まず、新鮮なネタが自慢で、特に地元の食材を贅沢に使った握りは絶品。馬刺しや熊本名物の馬肉寿司もオススメで、これぞ熊本の味といった感動を味わえる。寿司職人の手さばきは見ているだけで興奮するほど、一貫一貫に職人の心意気が感じられる。店内はシンプルで清潔感があり、カウンター席がおすすめ。スタッフは親しみやすく、お客に合ったオーダーの仕方や食べ方も教えてくれる。ただし、予約が取りにくいこともあるので、訪れる際は事前に確認が必要だ。価格はやや高めだが、その価値は充分にある。熊本を代表する寿司屋として、牛深丸は確かな舌触りと心地よいサービスでリピーターを生み出している。
