京都の夏と言えば、「鱧」でしょう！
昨夜は、串かつの活はも串をご相伴に預かり、今夜は鱧料理の代名詞「鱧落とし」をいただきます。
こちらは、京都の伝統的な町屋を改装した美しい趣きの空間が自慢のお店です。
天井の梁や柱に町家の名残りを残し、風情を感じられる居心地の良い店内で、創作和食料理が楽しめ、今宵はカウンターでライブ感満載でいただきます。
付け出しは、鯖の朴葉焼とガーリック枝豆になります。
いやー、新手の味に酒も進みます。
お造り3種は、鰹、真鯛、カンパチとなり、鰹は結構な厚切りでしっかり堪能出来ます。
そして、今夜のメイン、鱧落としになります。
鱧を素早く茹でて氷水に落として作ることから関西では鱧の落しと言われているようです。
京都の夏に欠かせない「鱧（はも）」。
鱧には、皮のすぐ上に小骨があります。
これがしっかり切れていないと食べた時に口の中であたるので、包丁で細かく切り目を入れますが、これを「骨切り」と呼んでいます。
上にのるのは、もちろん梅肉になります。
鱧落としには、必ず梅肉が合うんです。
鱧もそろそろ産卵を迎えシーズンが終わろうかと思いますので、是非お早めにいただいてくださいませ。
