ChefShinji Tokuo: Japanese Cuisine you won't get tired of, even if you eat it every day
Born in Kyoto Prefecture in 1972. He has been fond of cooking since he was a child, and once dreamed of becoming a French chef. However, when he entered high school, he decided to master Japanese Cuisine, which he would never tire of even if he ate it every day. He studied Japanese Cuisine and kaiseki cuisine for a total of 15 years at the Japanese Cuisine restaurant "Tankuma Kitaten" and at a traditional Japanese restaurant in Gion. After that, he became independent in 2005 and opened "Japanese Cuisine Tokuo" in Shimokiyamachi. He serves simple and gentle cuisine that never gets old, while maintaining the traditional Japanese style without flashy staging.

The owner himself visits the market to carefully select the most delicious ingredients from around the country. The specialty, whole turtle hotpot, is a simple yet profound dish in which turtle is carefully cooked to condense its flavor. Many guests visit just to eat this. The charcoal-grilled Japanese black beef, which is rare in traditional Japanese restaurants, is carefully cooked at a low temperature to perfection, allowing you to enjoy the sweet, melting texture of the beef along with the wasabi. You can feel the four seasons not only from the colorful ingredients but also from the gorgeous tableware.

All of the dishes, such as Tokuo's specialty, whole turtle hotpot and low-temperature charcoal-grilled Japanese black beef, have a gentle and deep flavor that seeps into the heart, and the dishes are masterpieces that exude Mr. Tokuo's personality.
