麺好きの私。先斗町通を四条通から北に100mくらいの西側(左手)にある2階建の町屋。
1階はカウンター、2階は座敷と掘りごたつの席があって、うどんすきや宴会もできるらしい。店内はシンプルで和モダンといったところか。
まずはオーソドックスにかけうどんを注文。「かけ」を食べればそこの実力がわかる←うどん評論家風(笑)。
980円。かけのイメージからは少し高い。先斗町にしては安い。そんなところか。
運ばれてきたうどん。やはり京都らしく上品だ。薬味が外付けで九条葱、茗荷(ミョウガ)、小さな梅の天麩羅、蓮根チップスがついてくる。それを少しずづ入れて食べるのだと説明される。
一口出汁を飲んでみると、出汁の色はうすいのに、それに反して味の広がりがすごい。それが中細の麺とよくあっている。
さすがに出汁にこだわっているというだけはある。蓮根チップスのパリパリ感もGOOD!もちろんおつゆまで全部飲んでしまった。
最近、さぬきや創作系のうどんが幅をきかせているが、ここのうどんは出汁作りにこだわったプロの作るうどんだ。
聞くと料理長はお蕎麦屋さんの息子で子供のころから店を手伝わされていたというゴリゴリの職人さんとのこと。
科学調味料は一切使用せず、高級な10種以上の厳選された食材からゆっくり出汁をとっているとのこと...納得。
またこのお店、一品でお惣菜や鯖寿司などもあり、夜は一品で飲みながら〆にうどんってのも有りだと思います。
