饒舌ではないご主人がお料理の説明を忘れると、女将さんから「ほら・・・」とに催促されている。どこの家庭も奥さまが強くて、尻に轢かれたご主人はお人好しである。
屋号『綾小路 唐津』。
①先付 〜車海老、鳥貝(舞鶴)、えんどう豆と薄く味つけられた小皿。 鳥貝の舞鶴産と宮津産の違いは出荷時期との話に。日々酒造をつけて。
②椀物 〜大きな帆立の真薯。黄色いきんちゃく風の真薯は帆立の濃い味に合わせた薄味の出汁。京都吉兆の味わいなのでしょう。伺いたいものです。

③造り 〜富山氷見のメジマグロ、八幡浜の白甘鯛の昆布締め。特にメジマグロが美味しかった。本鮪より香りが良いかな。香ばしくて美味しい煎った白ゴマと塩、ちり酢。

⑥マナガツオの煎り胡麻焼き 〜煎り胡麻が香ばしくて美味しく、淡白なマナガツオには丁度いい塩梅。
⑦炊き合わせ 〜海老芋、賀茂茄子、万願寺唐辛子、椎茸、南京。彩りも素晴らしく奥ゆかしい味わいが京都らしいな〜。こんな贅沢な炊き合わせは嬉しい〜(^^)

Tonight, I'm taking a stroll around Kyoto in Shijo, where the bustle has returned. When I opened the sliding door of a typical Kyoto townhouse in Ayakoji Shinmachi, the proprietress greeted me from the back. The spacious space is captivating with the back garden, and the counter has a calm, wickerwork ceiling. The owner is Mr. Karatsu, who is from Shimabara. He trained at Kyoto Kitcho and opened a restaurant with his wife, who is also from the same hometown, in 2017. It is a popular Kyoto restaurant with one Michelin star. First, I quench my thirst at Heartland. ① Appetizer - A small dish of lightly seasoned prawns, cockle (Maizuru), and peas. We talked about the difference between cockle from Maizuru and Miyazu being the shipping time. I also brewed sake every day. ② Soup - Large scallop sweet potato. The yellow sweet potato, which looks like a kinchaku, has a lightly seasoned broth that matches the rich flavor of the scallop. It must be the taste of Kyoto Kitcho. I'd like to visit. ③ Sashimi - Yellowfin tuna from Himi, Toyama, and white tilefish from Yawatahama, kombu-jime. The yellowfin tuna was especially delicious. It smells better than real tuna. Served with fragrant and delicious toasted white sesame seeds, salt, and chiri vinegar. ④ Hassun - Female swimming crab, red tilefish, minke whale, karasumi, sea bream Sushi, issun beans, Noto black seaweed, and osmanthus. None of them are flashy, but they have a solid flavor and are deep and modest. The homemade karasumi in particular is roasted and has a rich aroma, and the minke whale has a texture like meat. Come to think of it, whales are mammals~♫ ⑤ Junna and chilled 100% buckwheat noodles - Kyotango 100% buckwheat noodles, junna and pounded okra. It's a refreshing palate cleanser, but it's at the level of an amateur soup stock (sorry). ⑥ Grilled pomfret with roasted sesame seeds - The roasted sesame is fragrant and delicious, and the seasoning is just right for the mild pomfret. ⑦ Assorted stew - Shrimp potato, Kamo eggplant, Manganji pepper, shiitake mushroom, Nanjing. The colors are wonderful and the taste is very Kyoto-like. I'm happy to have such a luxurious assortment (^^) ⑧ Rice dish - Freshly cooked rice with Yawatamaki, Hana Sansho, Chirimen Sansho, Wagyu beef simmered with shigure, and pickled vegetables. ⑨ Dessert - Strawberry Ice cream When the husband, who is not very talkative, forgets to explain the dishes, the landlady urges him, saying, "Come on...". In every household, the wife is strong, and the husband who is run over by her is a good-natured person. That atmosphere seems to be the gentle Kyoto-like atmosphere that the restaurant exudes. However, the chef's cooking skills are not to be missed. It's a typical Kyoto restaurant where you can have a leisurely meal for the first time in a while. I'm sure the relaxed atmosphere is the chef's "ma". Thank you for the meal.
