大将が言うには、女将さんと女性の料理見習いの方がいらっしゃるが男性が定着しないで困っているとのこと、去年料理学校卒で入った人は1日目5時間で辞めたそうだ。でも女性のお弟子さんは優秀なのだろう。どれも丁重に美味しくしあがっている。素材もいいものを使われていて、これでランチ1万5千円とは信じられない。京都の日本料理店は素晴らしいが何故こんなに多いんだろう
