10月1日からラーメンの提供を本格的にスタートされた「MOON & BACK Ramen Bar & Branch Cafe」さん、お店に到着したのは20時半少し前、ラストオーダー寸前のギリギリ入店となりました。
カウンター席に座りメニューを拝見、ラーメンメニューは２種類あり今回は「炙り国産黒毛和牛、醤油ラーメンうさぎマークの味卵付き」(1,738円)をいただく事にしました。
どんぶりには、国産黒毛和牛のスライス肉と厚切りされた豚バラ、刻みネギ、味卵、花麩が盛り付けられており、目の前で国産黒毛和牛をガスバーナーで炙っていただく事で仕上がります。
スープは鶏がらベースの清湯に鯖節や鰹節から引いた出汁を合わせ、カエシにオイスターなどを使い更にエビオイルで厚みを与え、魚介系の香ばしさと和風感のあるあっさりとしながらもコク深い仕上がりになっています。
麺は棣鄂製の全粒粉入り平打ち麺が使われており程よい歯応えと切れの良さがあり、全粒粉らしい香ばしさもありスープも良く馴染みます。
味玉は黄身が半熟系、黒毛和牛は最初の１枚を塩だけでいただいてみるとトロッと濃厚な脂コクと肉の旨みが引き立ち、続いてスープにしゃぶしゃぶのように浸していただくとスープが出汁が染みて和風テイストになり美味しくいただきました。
当初はラーメンの提供は夜営業のみの様でしたが、現在はランチタイムにも「炙り国産黒毛和牛、醤油ラーメンうさぎマークの味卵付き」のみですが提供されているそうです。
