コクが強く香り高い寺町かもはるにしかない
特製スープです。
京都の老舗「麺屋」さんから仕入れるこだわりの細麺は鴨パイタンのスープに絶妙に絡みます。
チャーシューも全て「京鴨」を使用るロース、肩肉、ささみ、皮、と鴨専門店だからこそ食べられる希少部位ばかり。
味変に使う焦がし醤油、ラー油、ネギオイルも全て鴨の旨味を凝縮させた自家製調味料。
