・Green onion ・Daigo ・Sake-kasu ・Hamachi, sea bream, conger eel ・Conger eel, gluten, cucumber ・Grilled salted conger eel, miso yubeshi ・Deep-fried figs ・Octopus, pumpkin, sweet potato ・Steamed abalone, cucumber ・Rice ・Tortoise paste One dish that was particularly memorable was "Daigo," a reproduction of an ingredient from the Asuka period, and the oldest lactic acid in Japan. It was very elegant and delicious. Another dish was sake-kasu... it was solidified with egg yolk, and it was very delicious. None of the dishes were unnecessarily flashy, but they were simple and the flavor was what mattered.
