京都の大丸の近くにある、パスタが美味しいイタリアン。
ホールのペコリーノチーズの中で調理するというパスタを目当てに来ましたが、まずは前菜。
前菜3種だったんですが、パテ、ブロッコリー、かぼちゃ。
かぼちゃがものすごく旨くてびっくり。
お目当てのパスタ「炎のアマトリチャーナ グアンチャーレのトマトソース」（1980円）。
ホールのペコリーノにウォッカを注ぎ、着火。
炎の中に調理したパスタを入れてペコリーノチーズと絡めて仕上げ。
ペコリーノで濃厚になったトマトソースとグアンチャーレの塩味がいい感じでマッチしてます。
調理風景もさることながら、お味もバッチリ。
