今日のランチは、「四川料理 蜀江」。
京都市中京区、二条城の向かいANAクラウンプラザホテル京都の地下１Ｆにある四川料理レストラン。
とある会合で訪問です。
さすがホテルのレストランです、外観は中華テイストがアリながらも高級感を感じます。
部屋も豪華です。大きな円テーブルの上に丸い台がありますが回りません。
メニューは分かりませんが、「陳健太郎ランチコース」６６５５円のようです。
最近お亡くなりになられた中華の鉄人の息子さんが料理顧問で全面に押し出しています。
テーブルセッティングも高級です。
お品書きが添えられています。楽しみです。
まず前菜５種盛りが登場です。カシューナッツやミニトマトの中国酒漬けなどが手が込んでいます。
次にアサリ入りあおさ海苔のフカヒレスープ。まずあおさ海苔の緑が目に飛び込んできます。スプーンを入れるとアサリがタップリ入っています。魚介の旨味と磯の香りが広がり、さらにフカヒレの食感が楽しめます。これでもかこれでもかという料理です。
続いて海老のミルク炒めです。ミルク炒めというのが初めてかもしれません。海老がプリプリで優しいソースで包まれています。
豚肉の甘辛炒め。深い赤色の唐辛子が目立ちます。ウェイターさんが「唐辛子は食べないでください。以前食べた人がその後の料理の味が分からなくなりました。」と説明してくれます。柔らかな豚肉と野菜が餡に包まれてしっかり辛味のアクセントが効いています。恐る恐る唐辛子を食べてみると辛いですが、それほどでもありません。全部いただきました。
点心２種類が出てきます。肉まんは皮がふかふかです。もう一つはイモモチみたいな料理です。
メインというのでしょうか、陳健太郎麻婆豆腐とご飯です。麻婆豆腐はしっかり辛くて痺れます。その辛さの奥に旨味が感じられます。ご飯が合います。
デザートは杏仁豆腐のキウイソースかけ。なめらかな杏仁豆腐に酸味のある爽やかなキウイソースが合います。中国茶が添えられています。
かなり攻めた四川料理ですが当然ハイレベルで大満足です。
