中には大きな蛤が入ってて、ぷっりぷり
2月の節分に因んで、揚げた大豆を
目の前でお餅、海苔を炙り
更に上からカラスミをすりおろした
贅沢なカラスミ餅
八寸の器に鬼とお多福めっちゃ可愛い❤️
少しずつ、いろんなもの食べれる
季節を感じる事ができるのがうれしい
椀物は松葉蟹のシンジョウ
それを聖護院蕪のすり流しと共に
蟹の風味、香りが口中の広がる
蕪の甘さがたまらない
雲丹、トロ、イカを自分で巻いていただきます
こういうのセンスが出ますよね
すごくワクワクして楽しかった
アブラメの揚げ出しの上には八代青のりを
この青のりがものすごく美味しくて、上品な香りと風味
アブラメも美味しいんだけど、海苔の存在がすごかった
菊名、うど、銀杏、椎茸を白和に
こんな具沢山な白和は初めて
まったりと濃厚で日本酒に合いますよ!
月替わりの鍋は和牛サーロインと山菜の鍋
目の前で作ってくださります
お出汁にさーっと潜らせる程度
上質なお肉で脂溶けも上品
塩ポン酢、山椒味噌、温泉玉子と食べ方も楽しめます
土鍋ご飯は、ふき、桜鯛、筍と春満載
お腹いっぱいだったけど、美味しすぎたのでおかわりしちゃいました
甘味は椿餅と酒粕プリンを抹茶で
最初から最後まで、手の込んだお料理目で楽しむ季節感感動的でした
素敵なお店に連れてってくれた友人に感謝
