We had Christmas lunch. My honest impression is that it has a delicate and light taste. I don't know the background behind the cooking, but I thought it was similar to how monks at Zen temples prepare meals in terms of making the most of the ingredients. I also thought that the fact that it doesn't require much modification could be similar to the meals offered to Shinto gods. I don't think they use any animal fats (butter, fresh cream, etc.) in their desserts, so I think that's why the taste is so light. As a commoner, I have become accustomed to strong flavors and chemical seasonings, so I realized that my tongue's ability to appreciate delicate flavors has diminished considerably. This time we had champagne, rosé champagne, and white wine. They are all delicious. However, perhaps because of my habit of always eating and drinking strong-flavored dishes, the sweetness, richness, and acidity of even white wine outweighs the taste of restaurant food. I thought maybe not. We have a wonderful wine sommelier. Modern French cuisine restaurants don't have many bottles of wine available by the glass, but this restaurant's appeal is that they have a large selection of champagne, both white and red. The price per cup is on par with a super high-end French cuisine restaurant. The taste is better than the price. By the way, the dishes are: sweet shrimp, sea urchin/celery root, Oboro tofu from Chiyo Tofu Store, white miso from Yamari Shoten, veal thymus meat, mushrooms on the slopes/free-range eggs, Miyagi scallops, Shogoin turnip/kara ink, Shimane cold mackerel, pomelo/mimolette cheese, Yamagata Mogami duck. Dano Burdock/Beets Cacao Hunters Asahiya Farm Simmering Carrot Juice I was also happy that they served espresso instead of regular coffee at the end. Surprisingly, French cuisine restaurants don't have espresso.
