小さい頃、狭山くずの花を見た。
紫色のふさになって咲くこの花は、秋本にはサヤ豆のような果になっていた。京の「鍵子」にきてくずきりをたべていると、故郷の土の香がするのは私だけであろうか。
聞けば「鍵善」では大和のくずをつかっているそうな。
しかし、むかしのくずは暑狭境の奥山産のがあったともいう。
くずは根の強い植物で、アメリカなどは日本から種子を挿入して、くずれを防ぐ用に供し、何万坪ものくずの花の咲く山があるそうだ。
花はみごとでも、根がおいしくたべられるくずの風雅はアメリカ人のものではない。
これはなんといっても日本の味だ。
酒好きの私が、「鍵善」の二階へあがって、あの独特の器に入れてさし出されくずきりに、舌つづみを打つのは宿酔の朝である。
空の甘さと、くずの白さが、舌の上で冷たくまぶれて、つる
りとのどへ入りこむ。
あの味は、弦かむりから出る地酒の特級と同逃で、じっ
にうまい。うろこのようにかさなって咲く紫の花びらが、
たべったのこりの、氷水の面にうつっているような気がする。
私はいつも、二杯目をおかわりして笑われる。
搭づくりの店のたたずまいも、京の「鍵善」の風格にちがい
ないが、路や卓がいくらこられていても、味がまずければ
永続するものではない。
日本の山の土を守った根が、 おいしく加工されているからである。文明は山野をいくらけずりとっても、自然の美味はのこすものだ。
くずきりの味の王者だと思う。
