【食べログスイーツWEST百名店2022】
■くずきり（黒蜜）¥1,400（税込）
和菓子の銘菓が数多く並ぶ京都で、くず切りの銘菓として知られるのが創業三百有余年の老舗『鍵善良房（かぎぜんよしふさ）四条本店』。
店内に奥に、自然光の差し込む中庭を誂えた喫茶処があり、ゆったりと和菓子を愉しむことができる。
ここへ訪れたら、やはり食べたいのが7割以上が頼むという「くずきり」。元々は祇園界隈のお茶屋で食後の甘味として人気を博し、クチコミで広まった仕出しメニュー。店先や店内で提供するようになったのは昭和初期のことだそう。黒蜜と白蜜から選べられ、9割の客が黒蜜を選択するそうだ。無論、私も黒蜜。
くずきりの前に温かいお茶と、和三盆をつかった「菊寿糖」が提供される。菊の花を模ったひと口菓子。
そして、鍵の紋様が描かれた緑の漆器でくずきりがお目見え。底にくずきり、お重のようにその上に蜜を淹れた容器があり、その蜜に絡めながらいただく。このくずきりは、賞味期限15分らしい。
くずきりは、奈良吉野・大宇陀産の「吉野本葛」のみを使用し、水はかつては井戸水、現在は水道水を入念に軟水処理して使っているそう。
そんなこだわりの詰まったくずきりは、氷水に浸かり、透明感のある平打ち麺のよう。ツルっと爽快でなめらかな喉越しが気持ちいい。くにゃっとした特有の弾力とコシが心地いい。沖縄県産の黒糖蜜も濃厚で美味しい。そして、量の多さにびっくりする。甘味というよりは、食事の量笑。たっぷり食べられて嬉しい。
