鯖あじ(鯖姿寿し3かん あじ4かん) ¥1775
鯖姿寿し
昆布に包まれてるので、昆布を剥がして食べます。
鯖は脂がビックリするくらいのっていて、とても柔らかいです。
鯖とは思えないくらい甘みがあり、味付けは塩でしっかりされてます。
塩っけが強めですが、個人的に強めの方が鯖との相性がよく、美味しく感じます。
米はほのかに酢の酸味と、砂糖で甘く味つけされていて、鯖とよくあいます。
鯖といえば青魚特有の臭みがあるイメージですが、こちらいづ重の鯖は臭みがあまりなく、鯖が苦手な自分でも美味しくいただけました。
鯖特有の味はほのかにしますが、それがいいアクセントになっています。
