出張先での夕食のため、京都府京都市東山区富永町縄手東入る南側にある 炭焼 みや沢 へ。
こちらは、祇園四条駅から少し東に入ったところにある、渋い雰囲気の焼鳥屋さん。
店主自ら宮崎の窯元まで買いつけに行った「うなま備長炭」でじっくり焼くなど、こだわりを感じるお店。
朝引きの京赤地鶏で、地鶏のしっかりとした食感とジューシーな肉質が特徴的なお店です。
カウンター席にご案内。
角ハイボールを、店名が入ったコースターにのせていただきます。
キャベツはたっぷりと味噌を付けていただきます。
鬼おろしでザクザクにおろした大根は、食感も楽しめます。

創業より継ぎ足してきた秘伝のタレは甘すぎず、身にしっかり絡んでいます。卓上の黒七味や山椒も少しづつかけながらいただきます。
皮
パリパリに焼き上げた大きな皮。五島列島の海水塩「あかね」を合わせていて、皮の旨味をしっかり感じます。
心のこり
心臓と肝臓をつなぐ希少部位。旨味が強く、自家製のタレともよく合います。
