祇園・花見小路に佇むシックな店。
炭火割烹という珍しいジャンルながらも、
ミシュラン二ツ星を獲得している実力派です。
ちなみに店主は「あばれる君」そっくり(笑)
店主は炭火料理の探究者として有名な方なんだそう。
厨房の真ん中には、メインとなる炭火焼きの焼き台。
焼いているところを間近で見たいと思っていたんですが、
焼き台は高温になるとのことで、
カウンターとはあえて距離をとって設置されているそうです。
質の高い食材を炭火で炙ったり、焼くだけでなく、
香りづけなどの創意工夫が秀逸。
調理風景をみているだけでも、
レベルの高さが伝わってきました。
店主は、探究心がかなり旺盛なようなので
この先「炭火割烹いふき」がどのように進化していくのか、
楽しみでなりません。
