会員とブラック会員のみが予約できる2階の「おにかい」へ。
飲み放題がついている前の本店と同じシステムなんですね。
本店の良さを残しながらのこちらならではのアレンジで楽しめます。
この日は松茸からでした。
シンプルにいただきます。
懐かしのムネ雲丹。
これもこちらのアレンジとの事。
美味しいですね。ムネの食感が素晴らしい。
串も肉汁をしっかり閉じ込めた燻焼きです。ささみはマリネされておりジューシーにいただけます。
山椒と木の芽がよく合います。
究極どりのたたきも絶品。全てバランスよく素晴らしいコースでした。
つくねはかなり大きいのですがふわふわです！
肉厚ジューシー椎茸からのお椀は蛤と鶏白湯のマリアージュ。
絶品です！キンカンの火入れも完璧！
手羽先はミンチと奈良漬が忍ばせてあります。
これまた美味しい！〆は牡蠣の土鍋ご飯。
完璧です！！燻製された牡蠣から風味を移すのにタイミングをずっと測りながら仕上げられてました。
素晴らしい職人魂ですね！
