東山高台寺の隣りにオープンしたパークハイアット京都。その4階ルーフバルコニーにあるペントハウスがこのバー。夕暮れから薄暮にかけて、紫色のグラデュエーションをバックに、ライトアップされた八坂の塔や京都タワーの絶景が感動的な借景となっている。僅か12席のカウンターと2組のソファー席は、新しい京都の名所として、バー好きの聖地になる可能性を秘めているのではないだろうか。
スペシャリテは京都や日本、四季をテーマにした、パークハイアット京都オリジナルカクテルの数々。今回は京都伏見の銘醸、澤屋まつもとの守破離をベースに、抹茶を使ったショートカクテル。滑らかな口当たりのお薄を頂くような感覚で飲めるカクテルは、京都オリジナルに期待する海外や女性客をターゲットにしたカクテルとして分かりやすい。
チャームは胡麻と蕎麦粉のチュイル。豆腐のディップと相性抜群で、お替りが欲しくなる。出汁と山椒に漬け込まれたオリーブも止まらない美味しさ。オリーブが小振りで食べやすく、何より出汁が芯まで染み込んでいて、オリーブとは別の日本食になっている。しかしこのバーの最高のスペシャリテはバックバーの全面ガラスから臨む京都の絶景。目の前にライトアップされた八坂の塔や、その後ろに見える京都タワーは、夕陽、薄暮、夜景と移り変わる間中、みとれていても飽きることがない。
乾いた喉を潤す冬の1杯目は、オロロソソニックから始まる。さすがラグジュアリーホテルのバーは、シェリーの種類も一通り揃っていて嬉しい。定点観測はギムレット。ジンはオーソドックスにナンバーテン。いかにもHBA所属らしい女性バーテンダーのシェイクが、意外にハードで、細やかな氷の入り具合に感心する。シュハリカクテルは守破離の米の味を、抹茶とグレープフルーツジュースが円やかに包み込み、京都らしいはんなりとした仕上がりになっている。
まさに絶景という言葉がぴったりと似合うバーの客は、ほぼ海外からやってきたエグゼクティブ。予約は宿泊客しか出来ないが、席が空いていれば誰でも電話で確認後に利用することが出来る。ただしパークハイアット東京同様、バーまでの導線はかなりの難関。フロントから一番奥のエレベーターに乗り、さらに1度ルーフバルコニーに出て、ペントハウスに入り直すと言う導線は、知っているだけで通ぶれるように思える。
